Encounter
A typical encounter will be a monster or a group of monsters. There are endless variations of settings, terrain, reactions, and combat abilities of encounters with monsters, but typically combat will occur. See Combat Mechanics
However, occasionally an encounter will be a trap, riddle, puzzle or something unexpected.
Experience
After each encounter, the Dungeon Master will typically give out experience points. A good rule of thumb is to give each player 1 point if they played and were not disruptive or foolish in some manner, and give 2 points if a player was truly exemplary. Another option is to have each player vote on who was the most effective in the encounter and award an extra point to that player. Voting on who did well in actually role playing is also a viable option.
Levels are progressively harder to achieve.
